Even when the AP reloads, by default, it will have the critical information like IP addresses, etc being saved. So that once it reboots and is connected to the internet it can reconnect with Mist.
We also have another option of "AP Config Persistence" that can be enabled on the Site Configuration page, which will save the last known configuration on the APs itself. In such cases, the AP will know all the configurations of WLANs, etc. irrespective of the state of it's connectivity with Mist.
