While upgrading QFX5100, I noticed that host OS was different that rest of the versions. I saw that we can use force-host while installing the Junos image. I was wondering what will be the consequences of keeping Junos host OS different that other versions? Also, what is official recommendation?

The official recommendation is to upgrade with the force-host option.

The consequences are generally none.  But the mixing of host versions is NOT tested at all in the Junos QA process.  So there is a risk of software bugs by mixing the host and Junos versions.

As far as I know, QFX5100 is a virtual machine system.

Past experience will suggest that the host version is the same as or the latest version of the installed junos image.

The host version is different or the version is too low or the difference is too large, there is a chance that errors will be encountered in the architecture.
